Cranberry Margaritas

On our way home today my dear husband asked about these margaritas- do we have everything at home to make them? No. So we stopped for limes and cranberry juice.

So glad! We made these first at New Year's, just our usual at-home celebration. I didn't blog about them bit obviously Jimmy didn't forget about them.

Tequila, triple sec, lime juice, cranberry juice, a bit of simple syrup. You'll love them too!

Gobble until you Wobble!

My Thanksgiving plate: Herb Roasted Turkey with Sage Gravy, Double Bread Stuffing with Brown Butter, Bacon and Sage, Squash, Green Bean Casserole, PW Mashed Potatoes, and Cranberry Sauce.



The Tauer family came over for Thanksgiving. To prep we made these cute Oreo turkeys the night before. James enjoyed putting the parts together :)


We put a turkey at each place setting. James helped! It was also a good way to prepare James for guests. He knew who was coming over and he was excited for them to see his turkeys.


We needed to break out a card table. I was determined that this wouldn't be a "kid's table" Kara (college student) isn't a kid! I knew I would be insulted to be called a kid at that age :)


Oh there's Kara, relaxing on the massage chair. I went downstairs to give the 10 minute warning for food and found lots of fun in the basement. Massage chair...

I am SO THANKFUL for this little boy.

I tackled yeast again. Buttery Cloverleaf rolls.


THE BEST Green Bean Casserole. The mushroom sauce was killer. We think we might need to make some and just eat it as SOUP.


Double Bread Stuffing with Brown Butter, Bacon and Sage. You just can't go wrong with my favorite breads- cornbread and sourdough... Mmmmmmmm. And hello? BACON!



I didn't get a picture of Laura's squash. It's pictured on my plate above!

Simple cranberry sauce.


Roger and Linda brought Wild Rice Soup.


They also brought dessert- apple pie and pumpkin trifle (layered with gingerbread, pumpkin pudding, cool whip).


Again, I didn't get many pictures with family but here is James saying goodbye to Grandma Laura. He was pretty cranky towards the end so I'm glad she got a hug :)



We are thankful for so much! Thank you Familia :)

Thanksgiving

It's amazing how little time it takes to scarf down all that food, all that love, energy, and time spent cooking for two days. Was it worth it? Of course! I was very happy to try so many new recipes. I don't think a single one really disappointed. My cranberry walnut rolls weren't light and fluffy, but kind of dense but still good. It was one recipe I wouldn't repeat as is. I wonder if I kneaded too much? Anyway, lots of good food. And I made my own gravy! Very proud and happy :)


OH! And my husband made both desserts. I can't make any claims on those. He did a fabulous job!

Unfortunately, I didn't get any "after" pictures of the turkey. This is the 20 pounder slathered in herb butter. James declared it "yucky" looking.



The turkey ended up with a fabulous brown crust. It was darn pretty. I am so regretful that I did not get one little picture. Oh well. I have something better- leftovers!

Pioneer Woman's Creamy Mashed Potatoes- These were great because I made them ahead of time and just stuck them in the oven while the turkey rested.


Brussel Sprouts Gratin- This isn't a picture from tonight's gratin. I was flying around the kitchen at the very end and didn't take a picture of the gratin or the turkey. Bummer.



Sourdough Stuffing with Carmelized Onions and Apples


We are all satisifed and full. Our guests all went home with plenty of leftovers. That 2o pound bird was more than enough for our meal and many others. Happy Thanksgiving!

Apple Cranberry Bran Muffins


We have an abundance of apples thanks to our Saturday visit to the apple orchard. This muffin recipe only used ONE apple but I wanted to try it. I used wheat bran, which is a new-to-me ingredient. I found wheat bran in the bulk section of the grocery store, where you can fill a little baggie with however much you need. I only needed 1 1/2 cups so I thought this was a good way to buy it.


These muffins are healthy! And pretty good for being so healthy :) I just love any cranberry apple combination so I was sold at the recipe title. AND these came from a reliable, wonderful blog.

Each muffin is 2 weight watcher points.

Fall Harvest Bread


I'm looking through my older pictures and finding foods that I just NEED to blog about. I made this Fall Harvest Bread so many times this last fall. It is wonderful. It freezes well and my husband just loved it. I loved it too, with all of its pumpkin, cranberry, and apple goodness. Some of my favorite things in the world!


It was because of this bread that I over-bought fresh cranberries for my freezer. I think I still have a few bags left, but I never got around to making more of this bread. I think I need to make some!

Apple Cranberry Cake-Pie



Oh man. This is one of my favorites. Now why haven't I made this one multiple, multiple times?? I need priorities in my life, people! Okay, well the recipe is really a pie crust, filling, but in a cake pan. No fussy crust making or fluting. It was all very easy and it was just wonderful tasting with a little ice cream on top. Oh yum.

Candied Cranberry Orange Sangria

Nice weather deserves a cool drink.
Yeah, that's a good reason to make sangria!

I have a Sangria cookbook that I don't use often and I have a lot of cranberries still in the freezer (they last many months) so it seemed like a great opportunity to make this recipe.

There is no stolen recipe online.



Candied Cranberry Orange Sangria
1 1/2 cups whole cranberries
3/4 cup simple syrup (see note below)
1 bottle red wine
2 oranges, cut into half wheels
1/2 cup cranberry juice

In a saucepan, combine the whole cranberries with the simple syrup over low heat. Cook, stirring constantly, until the cranberries soften and the syrup starts to thicken. Remove from the heat and set aside. Let cool. Combine the wine, oranges, and cranberry juice in a large ceramic or glass container. Add the cranberry mixture and stir well. Refrigerate for at least 4 hours. Serve over ice. Garnish with additional orange half wheels.

Note: This simple syrup is made by combining 1 cup hot water and 1 cup sugar, until the sugar dissolves. Let cool.

Serves about 7

I didn't, I couldn't wait four hours. I am enjoying a small glass right now. Yum! I love anything cranberry so I am a bit biased.
