PW's Sunday Frittata and Buttermilk Pancake Balls

Breakfast for dinner!

 

PW says that frittatas are good for using up any veggies you have in the fridge. True! I had some leftover spinach, mushrooms, and (jarred) roasted bell peppers that I threw in. I also baked a potato the night before so I could chop it up easily for a quick dinner. It's all in the planning.

Gosh, I love potatoes.

 

And making pancake balls at the same time. It's a Tuesday tradition. I always have buttermilk in the fridge just for these.

 

After cooking up the veggies a bit I threw the eggs and cheese on top and transferred it to the oven. It took quite a bit longer than PW said it would. I give the woman some slack since she is NOT a professional cook.

 

It slid out of the pan, not so easily. But it turned out!

 

And it was delicious! Just a nice eggy treat. I realized afterward that it would have been nicer with hot sauce. Leftovers.

Star Wars pancakes

Happy Father's Day! My husband and small child are SW geeks so I thought making special pancakes were fitting for this special day. My husband saw the SW pancake molds too early- he had a friend who sent him the Williams Sonoma link and he very excitedly told me about the molds. I was disappointed because I was going to buy them secretly and then surprise him with the pancakes. Oh well. I bought the molds and showed them to him, content to just surprise our son with the pancakes that morning.


They were very easy to make, especially with my pancake pen! I just had to let one side of the pancake cook in the mold for 2 minutes, remove the (nonstick) mold carefully, and then flip the pancake. It held its shape nicely but I used a toothpick to trim some extra edges and to make sure the eyes and other cut-outs were neat.

So I definitely give these pancakes molds a big thumbs up! I know we'll use them often :)

Pancakes

It's one of my favorite meals. Breakfast. Any breakfast is good. It's also an easy meal for the nights when it's just me and the little boy :)


I have a product rave- my first one! I guess I should have raved about my pancake pan a long time ago but just recently I bought a Pancake Pen and I love it! It's especially good to fill up the small pancake holes in this pan. I can't believe I lived without this pen for so long :)




I also tried out the pancake pan that my sister sent to my son from Japan. It makes a pancake in the shape of a pig! He loved it! It was also easy to make with my new pen. Woohoo!

Porky got a little toasty but I cut myself some slack since it was my first time using the pan.



These pancake balls will last us maybe the week. My son eats 4-5 at a time!



I've blogged about this pancake recipe before. I think I need to experiment with other recipe though.

Buttermilk pancakes

I made this simple recipe into pancake balls for my little boy but it's the best and simplest of all of the pancake recipes I've made. I've been making double batches and making tons of pancake balls at a time because they freeze well.


These were filled with chocolate chips!



I'm not able to find the recipe online but it came from my Better Homes and Gardens "New Baking Book", 1998.


1 cup flour
2 Tbsp sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 beaten egg
1 cup buttermilk (or 1 Tbsp lemon juice and enough milk to make 1 cup, let sit for 5 minutes before using)
2 Tbsp cooking oil

Mix dry ingredients together. Mix wet ingredients in another bowl. Add wet to dry, stir just until moistened.

Cook pancakes as you would normally.

I made a fancier recipe not that long ago and we agreed this simple one was better- fluffy, tastier. Good ol' Better Homes and Gardens :)

Cinnamon Bun Ebelskiver

We all had our Valentines breakfast of Cinnamon Bun filled pancakes with cream cheese icing and Eggs. Yum.

These are quite a bit of effort. There is the pancake mix to make (involving whipped egg whites, a bit more time consuming), and then a cinnamon filling to make, and then the cream cheese icing. And then you cook the things. It is a wonderful treat though!
