Raspberry Coconut Pops
I was so excited to try this recipe. I love love love coconut. The raspberries kinda sorta overpowered this popsicle but it wasn't unpleasant. The coconut flakes added a great texture. Just yum.

Chocolate Raspberry Truffle Torte
I was asked to bring a dessert to a friend's house, for a birthday celebration. I was told that she likes tortes. I actually considered just buying one from a fancy bakery in Anoka but I looked up some recipes and found this one. It didn't seem hard at all, and used very few ingredients. The blogger's picture looks absolutely HORRIBLE but the reviews were good.

It tastes a lot like the Chocolate Intensity Cake that Jim loves so much but with a sweet raspberry kick.
My friends really loved this cake. We are all dieting in some way so I watched them eat little bits at a time. A lot of little bits but who was counting?

This cake was made in a 8 inch springform pan. The cake was on the thin side, but a slice was still 8 Weight Watcher points. There were 8 servings. But really, you only needed half a slice. It's very rich and delicious.

Raspberry Chocolate Chip Ice Cream

OMG! I think I say that every ice cream is my favorite flavor but really, really this is it. I think I only made this once because it was a pain in the arse to strain the seeds from the raspberry puree but I think I need to get my lazy self going on this one again. I need to find some local raspberries, that don't cost me an arm and a leg.
I added the chocolate chips because I remembered that Sebastian Joe's in Minneapolis makes this ice cream and I've always insisted that I get it whenever I'm there. It's funny that I'm not even tempted to go there anymore now that I make my own icre cream. Actually, I do want to go there. I think I would like to get some more ideas :) They make some unique flavors but I do tend to stay on the safe, simple side.
I used my Perfect Scoop cookbook for this recipe but I found the recipe online. Of course! I think every food blogger that makes ice cream uses that book!

Oatmeal Raspberry Scones & Clementine Curd
I combined two recipes that didn't excite me. Together they were good! The scones needed some sweetness. My curd hadn't thickened up but it made a great little sauce. I'm trying to find some other use for it...

Raspberry Cream Sandwich Cookies
I made cookies for the people at work to celebrate Guidance Counselor appreciation week. Vanilla bean cookies with raspberry cream. They were delicious. I had several requests for the recipe (that I gladly shared, of course) and I had reports that others had the same great success with these cookies. They were definitely one of my favorite cookies ever. I need to bake them again.
