Crockpot Asian Pork with Mushrooms

Good job, Self, for planning a crockpot meal on my first day back to work. Better yet my wonderful husband did all the prep work in the morning and it was cooking away when I got home! Nothing is better than coming home and smelling dinner prepping!

 

Well, okay, it gets better when your husband remembers there is a bottle of wine in the fridge and he pours you a glass. Ahhhhhh!

 

I've made this recipe once before but I guess I did not blog it.

We used a pork tenderloin instead of a roast. No reason, it's just what I bought at Costco. I think it should not cook for the entire 8 hours then, and my husband wisely saw this and set it to warm early. He seared up the pork this morning, mixed up the spices and ingredients and let it bubble.

There's a sweet spiciness to this, with a bit of ginger. I didn't ask if he added more ginger than the recipe states (I usually do to any recipe) but I think he did.

So delicious flavors, easy to make, and even better if someone else cooks it!

Turkey, Mushroom, and Wild Rice Soup

Still working on leftovers. We used most of the leftover turkey in this soup. Soups are my FAVE. We needed to pick up mushrooms (baby bellas), more broth, and an onion.

This simmered in the background while we played with James and enjoyed our Christmas lights.



This was a great soup. I'm so glad there is leftovers of the leftovers!

Bacon Lover's Mac & Cheese

Yeah, my husband loves bacon.




I damn near had to do a bacon intervention a few weeks ago and I purposely stopped buying the bacon. I did give in to this recipe because... well, I love my husband but I do love my bacon too.

This was gooooood. Jim gave it a 9.5! I discovered that I love Fontina cheese- so tangy and creamy. YUM.

The baby bella mushrooms and spinach made me feel a LITTLE better about using so much bacon and then using the bacon grease to cook the mushrooms, and then a little grease added to the butter for the roux. Oh, and a little more grease on top of the entire dish before it went into the oven. Hey, the recipe said to do all that!

Thanksgiving

It's amazing how little time it takes to scarf down all that food, all that love, energy, and time spent cooking for two days. Was it worth it? Of course! I was very happy to try so many new recipes. I don't think a single one really disappointed. My cranberry walnut rolls weren't light and fluffy, but kind of dense but still good. It was one recipe I wouldn't repeat as is. I wonder if I kneaded too much? Anyway, lots of good food. And I made my own gravy! Very proud and happy :)


OH! And my husband made both desserts. I can't make any claims on those. He did a fabulous job!

Unfortunately, I didn't get any "after" pictures of the turkey. This is the 20 pounder slathered in herb butter. James declared it "yucky" looking.



The turkey ended up with a fabulous brown crust. It was darn pretty. I am so regretful that I did not get one little picture. Oh well. I have something better- leftovers!

Pioneer Woman's Creamy Mashed Potatoes- These were great because I made them ahead of time and just stuck them in the oven while the turkey rested.


Brussel Sprouts Gratin- This isn't a picture from tonight's gratin. I was flying around the kitchen at the very end and didn't take a picture of the gratin or the turkey. Bummer.



Sourdough Stuffing with Carmelized Onions and Apples


We are all satisifed and full. Our guests all went home with plenty of leftovers. That 2o pound bird was more than enough for our meal and many others. Happy Thanksgiving!

Chicken Scallopine

Chicken Scallopine is one of our favorite meals ever. Yum. You just can't go wrong with the Pioneer Woman. Or pan fried chicken in butter and olive oil. Or lemons and pasta. Oooh, and capers and mushrooms. (Dreamy sigh!)
